Chicken/Veg Pilaf

Ok, so I have looked for a recipe to adapt to SW for this and I made it last night and was lush!!

Cook up as much rice as you need whilst making your sauce.

I used

Left over chicken
1 x Tin toms
1 x Courgette
1 x Onion
Peas and sweetcorn
3 x cloves garlic
1 x sweet red pepper

Sautee onion and garlic in a pan with fry light.
Add the mushrooms and pepper til softer
Pour in the tin of toms and add peas sweetcorn and courgette and chicken.

Add seasoning, i used chilli powder and paprika to give it some taste but you can use anything you like to make it tastier.

Cook down until veg is soft and add to the cooked rice whilst its still hot and serve, its soo nice and enough for lunch!!

You can also add anything you like to use it up veg wise and adapt it meat wise!!
