Veggie and Vegan Team Anyone?

I have learnt to switch off when people talk about meat. I also pipe up with vegan tips, and some people have been happy to hear them - so give it a go ;) Last week I said about how you don't have low fat vegan products (we're all skinny anemics, obviously!) and to save on syns, instead of having butter on toast, I spray a bit of frylight on them instead to make them a tiny bit moist instead of dry. People were much impressed :)

Isn't it strange they think v&vs are all thin and pale? When I say I'm veggie people actually say I don't 'look like one'!!
 
The other noticable thing is they like our food! Whenever a group has done a 'party'/tasting session my food always disappears quickly. Bit of a bummer really as I can rarely eat what the others have bought in. But like Mandlegrot says, its a chance to open eyes. In fact the last one I went to I took in a rather nice rice based salad and there was some left at the end and someone got out an empty container and asked if she could have it for her lunch the next day.

Rice salad.

cooked rice, washed baked beans, grilled peppers, gerkhins, pickled walnuts (dunno how many is a HEXB now but use your own judgement) green stuff, tomatoes, whatever salady bits you have lying around, it's the vinegary pickles that gives it the taste. Season with bouillon powder to taste, maybe some more vinegar or the pickled walnut juice if you've used them .... be creative, it's nice.

I'm having a varient on this tonight but haven't got any walnuts.
 
Another recipe: Sweet and Sour Chickenish

I use the GoodLife Chicken style lumps which to the best of my knowledge are a free food.

1 carton of passata
3 desertspoons of powdered sucralose based sweetener
" " " of vinegar, balsamic is nice
1 desertspoon of soya sauce.

Check the taste at this point, stir first, and adjust if necessary.

Bung in half a packet of the chicken style lumps, and veggies. I had most of a packet of the ready made stir fry mix most supermarkets do and some baby sweet corn. Bring to the boil and simmer till it gets soft.

Amazingly good.
 
It is indeed free and the best mince I've had. Cook for a long time and its yummy. The meatballs are nice ( not sure whether vegan) and only 3 syns per pack. Cook with chopped Toms, passata, peppers, mushrooms, garlic, oregano, basil. Fry balls in frylight first then bung it all in.

Mince with toms, passata, peppers, mushrooms, onion, cut up v small, asda chilli beans, chilli, garlic. You can use tinned mixed veg. If in a rush. Bubble for ages. Yum

Be careful though asda chicken pieces higher in syns

I made a sauce that I haven't made for ages and I'd almost forgotten what a gem it is. Creamy garlic mushroom sauce. Vegetarian not vegan (sorry).

Fry light and fry the mushrooms, add garlic, cook for a few mins and stir in some Philly extra light or lowlow (laughing cow works too). Stir season and serve.

I had mine on a quorn peppered steak and jacket. It's gorgeous on posh toast too as a starter. No syns just a hea. I used half a tub if lowlow.
