I guess unlike foods that change when they're fiddled with (eg using potatoes to make crisps, or cakes from couscous), breadcrumbs will still bulk out food & still contains the fibre required for it to be considered a HE.

Might be worth dropping SW an email to get the official line though.

You don't have to use breadcrumbs to make fishcakes. I'm making some tonight and just mix the mash and fish together with a bit of parsley and just enough beaten egg to bind. Form in to cakes and put in fridge to firm up (at least 30 minutes but longer if you can).

Then either grill, bake or fry in frylight.
