Better Blueberry Pancakes (so scrummy from Biggest Loser cookbook)

makes 2 servings (4 pancakes each)
140 calories, 8g protein, 20g carbohydrates, 3g fat (less than 1g saturated), 5mg cholesterol, 3g fibre....per serving :D

1/2 cup (120ml) reduced fat buttermilk
1/2 cup (60g) whole grain oat flour
1 large egg white, lightly beaten
1/2tsp baking soda
1/4tsp vanilla extract
1/4tsp salt
1/2 cup (60g) fresh or frozen blueberries

in a small bowl combine...buttermilk,flour,egg white, baking soda, vanilla,salt ....whisk until blended together.
Stir in blueberries and leave to stand for 10 minutes

heat a frying pan and spray with low cal oil

pour the batter in 1/8 cups dollops (2tbsp), cook for around 2 minutes, or until bubbles appear on the tops then flip them

repeat until you have used the mixture up

You can make your own buttermilk with semi/skimmed milk .....put 1tbsp lemon juice in jug and add 240ml milk leave for 10 minutes......hey presto buttermilk lol :)

You gotta try this recipe its so scrummy...lovely for breakfast :):)
