What is best way to.cook butternut squash? Someone said to do it in chunks, like mini potatoes in oven with frylight. Do you par boil first?

I usually just cut it into cubes and roast. Or cut it in half lengthwise, place face down on an oven tray, bake for a couple of hours - leave to cool, scoop out the soft flesh, and blend with vege stock/light coconut milk/evaporated milk and herbs/spices for an easy and delicious soup!

Hi there, I'm lazy, sometimes I just chop it up and boil and mash instead of Potatoes. Works well. It's also good to cut into chips and oven cook

Thanks. Yeah I made some today in the oven. Very nice. Will have to try.doing them like mash : )
