hello does anyone know what to do with chicory i have a load growing in the garden and i cut some off today thinking it was lettuce, and i hope it tastes better cooked than raw yukkkk:yuk: also i have spinach growing and am not sure what to do with that either any help and suggestions would be appreciated

Chicory is lovely chopped up in salads or as a "spoon" for dips or pâté eg the tzatziki, hummus or salsa dips or the mackerel pate. Great to snack on syn free. It can be a little bit bitter but is great when balanced by other flavours. Never had it cooked. Spinach is great as an addition to soups or with eggs. Or you can put it as a hidden veg in sauces or in curries. So good for you and tasty. Can also use baby spinach leaves instead of salad leaves.
