Chocolate and apricot cake - very low syned!

    I decided to experiment with a combination of recipes and came up with this and it tastes really nice.

    120gms couscous, soaked in boiling water
    1 tin chick peas, drained
    3 eggs, separated
    1 heaped tbs cocoa powder (dissolved in boiling water) (2.5 syns)
    1 tsp vanilla essence
    12 heaped tbsp sweetener (or as per taste)
    1 tsp baking powder (1/2 syn)
    71gms dried apricots diced finely (1 Hexb)

    Preheat oven to 180deg C

    Liquidise chick peas and add to couscous mixture together with egg yolks.
    Add all the other ingredients except egg whites and mix well.
    Beat egg whites until stiff and fold into mixture.
    Pour into greased (using fry lite) cake tin or loaf tins (I used two small disposable foil tins) and bake for about 25 minutes until browned.
    Cool and turn out onto baking racks.

    The whole cake/s is 3 syns for EE and green and really nice.

    Baking with couscous

    In the recipe you add a note "couscous is free used like this, as per clarification from SW"

    I regularly bake with couscous and also treat it a free food, but my new class leader insists it must be counted as 5 syns per 28g/1oz on all eating plans.

    I would be interested to know what SW actually said to you - was it just your class leader from Head Office?

    Thanks - the recipe looks good - I'm going to try it this week.

    Thanks Donnie... I like it but I'll a bit more sweetener next time as it could be a little sweeter!

    Ooooh this sounds scrummy and I have all the ingredients in my cupboard so think I will be making it tonight. :gimi:

    I think the reason couscous is free in this recipe is because you are using it in natural state (i.e., fluffed after adding water) and not grinding it down into an actual "flour". When it is ground down into "flour", according to book it then contains 5 syns.

    You are very welcome, but if you like it pretty sweet I'd add a bit more sweetener or even a little honey would be good.
    I finished both my little loaves and want more but used up most of my ingredients so will stock up tomorrow!
