Lover of Extra Easy
I decided to experiment with a combination of recipes and came up with this and it tastes really nice.
120gms couscous, soaked in boiling water
1 tin chick peas, drained
3 eggs, separated
1 heaped tbs cocoa powder (dissolved in boiling water) (2.5 syns)
1 tsp vanilla essence
12 heaped tbsp sweetener (or as per taste)
1 tsp baking powder (1/2 syn)
71gms dried apricots diced finely (1 Hexb)
Preheat oven to 180deg C
Liquidise chick peas and add to couscous mixture together with egg yolks.
Add all the other ingredients except egg whites and mix well.
Beat egg whites until stiff and fold into mixture.
Pour into greased (using fry lite) cake tin or loaf tins (I used two small disposable foil tins) and bake for about 25 minutes until browned.
Cool and turn out onto baking racks.
The whole cake/s is 3 syns for EE and green and really nice.
