Extra Easy Days: SW Quiche

Hi Everyone

Just a quick question regarding the SW Quiche. I'm thinking of making a veggie one tomorrow since I have the day off, I don't have a flan dish is, can i put it in 2 small pyrex dishes? Also can I freeze it? Its just me as OH doesn't eat eggs and I know I won't get through 2. If I can freeze it how long for? Lol sorry for all the questions, Ive heard so much about these quiches I want to try them.

Have you got a bun tin or muffin tin? you can make small ones, I personally would not recommend freezing them, they can be a tad watery as they are and would be a bit wet when thawed. Others might disagree though. Anyway none of mine last long enough to be frozen and that's just with me eating them! You can also line the bun tin with ham slices if you are not vegetarian.

I make mini ones in silicone cake cases but a Pyrex would be fine dunno about freezing tho xxx

Thank you for your replies. I made 2 small ones and have eaten one already, the other is in my fridge to take to work for lunch tomorrow. xx
