Healthy ice cream recipe. Vegan and diabetic friendly.

Tried this. Worked a treat. You will need.

One very ripe banana. The more black spots the better.

One heaped teaspoon of peanut butter. I use low fat smooth style.

Peel the banana and chop into thin slices. Freeze overnight or at least three hours.

Place banana in a food processor and add the peanut butter. Switch on for a minute or two. If it clings to the side, add a drop of water. That is it.
