Homemade sugar-free balsamic reduction

I know that balsamic vinegar is free and that balsamic reduction/dressing/glaze has syns. Supermarket balsamic glazes contain sugar, so I was considering making my own balsamic reduction by reducing some balsamic vinegar down (by half) with a teaspoon or two of sweetener. Would I still need to syn it? It would presumably contain more sugar for the same volume than the original vinegar, but I would probably have less so I'm not sure!

According to my consultant if you use a level tablespoon of sweetener you have to Syn it...it’s a 1/2 Syn
Hope that helps:classic_smile:

Awesome! I didn't use anywhere near a tablespoon for the whole batch (150ml) and if anything it was too sweet. Next time I don't think I'll add any at all. Plus I only had a drizzle so I'm pretty confident it is syn free - whoop! It was nice and sticky but it didn't come out quite as thick as I'd have liked so I'll try adding some xanthan gum next time I use it.
