I'm using sweet potatoes for the first time today. I've peeled & cut them into wedges and am going to par-boil them before doing them in the oven. I'd be interested to know how to cook a baked potato too and how yours turns out compared to a "normal" spud

You just bake them in the same way as you would a normal potato. Scrub the potato, wrap it in foil and bung it in the oven for 40-50 minutes depending on the size. :)

I normally just micro mine - wash them and prick them and shove them in - bear in mind they seem to take half the time of a normal spuddie...and they go a lot softer....but def don't need butter in - they're scrummy as they are!
