Insulin resistance

Hi I am on my last week of TFR then going into re-feed and cant wait. I have read all of the instructions and noticed that those with insulin resistance should avoid the fruit until until later in the week and even then not to snack on it during the day but have a couple of pieces in the evening. Can anyone explain this to me? I have issues with insulin due to having PCOS and before I started LT I was taking metformin which is supposed to help (I never saw a difference though)
Just wondering if anybody else has this issue and whether you have any further advise on what else I can do?
