Meat & Egg Loaf

Serves 4
Free on Red days

340g/12oz extra lean minced beef
1 level tbsp tomato puree
freshly ground black pepper
pinch of grated nutmeg
pinch of dried thyme
1 large egg, raw
1 small onion, finely chopped
1/2 level tsp salt
1 tbsp worcestershire sauce
pinch all spice
1 level tsp finely chopped parsley
2 hard boiled eggs

1) preheat the oven to 190 oc/gas mark 5. Put all ingredients in a bowl, except the hard boiled eggs, mix until well combined.

2) Shape the meat mixture into a flat rectangle & place the hard boiuled eggs down the centre. Roll the meat around the eggs, using your fingers. Place in a small (1lb) loaf tin, cover with foil & cook in the oven for 45-55minuites. Remove the foil & cook for a further 10 minutes to brown the top.

3) serve hot with free green vegetables of your choice or cold with a large mixws salad.

If you buy the syn free tomato purée then it's free :D providing you change the brown sugar to sweetener anyway.
