Had to post this one , i had taken chicken thighs out for last nights tea and wasn't sure what to make as I really wasn't hungry , so I found the recipe in the little booklet that came with one of the mags about 6months ago
Basically I sliced potatoes, onion, tomato, mushrooms and arranged on a baking tray sprayed with frylight add the skinless chicken thighs , 1tsp of parsley garlic & chill, salt & pepper and add chicken stock.
Pop in the oven for 45 mins @ 220c

After cooking .....

Served with peas , beans & cauli
