Hi, I hope you like this, made it last week
Ingredients
One onion (finely chopped)
One clove of garlic (more if you like lots of garlic)
Half a stick of celery (finely chopped)
Two tubs of button mushrooms (chopped finely)
Mushroom stock cube (try the kosher section in the supermarket)
Fry light
Handful of parsley
salt/pepper
Fry the onion, celery and garlic for 5-10mins
Add the mushrooms (reserving a handful for the end) and cook for another five mins or so.
Make up 500ml of stock and add.
After another 5mins of cooking, blend till smooth.
Add the remaining sliced mushrooms (gives a little texture)
Add chopped parsley and season
If you fancy it being a bit richer, add some low fat fromage frais, but do it at the very end, and once the soup is off the heat, and it should stop it from splitting
