Just thought I'd share my recipe for pancakes, trying to get an appropriate point level per pancake without them falling apart in the pan has been a practising mission!

Pancakes: Makes 10 Pancakes
1 Pancake: 2 Points (rounded up from 1.8)
2 Pancake: 3.5 Points (rounded down from 3.6)

2 Eggs
600ml Skimmed Milk (UHT/LongLife seems creamier so I use that)
200g Plain Flour

Bung it all together, sieve the flour if it's particulary lumpy!

Total Points for Mix: 18

Sprinkle some Splenda (or any kind of granulated sweetner)
Lemon juice

Topping Points: 0
