Recipe makes 6 cakes

3.5 syns per cake



Ingredients



  • 100g of self raising flour (17 syns)
  • 100g of blueberries (3 syns)
  • 100g of fat free vanilla yoghurt
  • 1 egg
  • 1/4 cup of Splenda (50ml of a measuring jug)
  • 1 teaspoon of cinnamon
  • Frylight Buttery or Pam Spray
  • topping:
  • 1 teaspoon of cinnamon
  • 1 teaspoon of brown sugar (1 syn)
  • Frylight Buttery or Pam Spray
Method



Preheat oven to 180c of 350f

Grease 6 muffin cases with Frylight buttery or Pam spray, place in a muffin/cupcake baking tray

Sieve the flour into a bowl, add the cinnamon.



In a separate bowl, mix together the egg, yoghurt and sweetener.



Fold into the flour.



Add the blueberries

Then spoon your mixture into the muffin cases.



Sprinkle over the top with the brown sugar and cinnamon mixture.



Bake in the oven for approx 30mins. Cakes will be slightly golden on top, and a wooden skewer entered through the centre will come out clean.



These muffins could easily be substituted with other types of fruit. But remember to syn your fruit, as once cooked it is no longer free.
