recipe tips for newbie

Hi I have been perusing the forums prior to joining sw but have a couple of questions about the recipes I have seen on the web.
Are smash flakes particularly flaky! Sounds a silly question but the instant mash I use I would describe more as a powder (it always used to be free on sw I'm hoping it still is) just wondering about texture etc
Can the smash coating be used on a variety of things; I think I've only seen it on chicken so far but as I'm now gluten free this could be a useful ingredient
How do you syn recipes (i can't remember if there's a recipe builder online) esp for ee as I have no experiance of this it was just red and green when I did sw.
