Thank you Margaret and congrats on your weight loss, 3 and a half stone is a hugeeee loss. Not long until you reach 4! Here's the recipes for the burgers, I vary what I put in them a lot of the time but the base mix is always the same.
1 pack of extra lean mince
1 finely diced onion
2 beef oxo cubes
1 tbs salt
1 tbs pepper
1 egg
Combine everything except the egg until it forms a sticky and well mixed consistency, I do this either in the food processor or by hand (but it gets a bit messy!). A whole packet of mince normally makes between 6-8 burgers. In a seperate bowl, whisk the egg. Use a handful of the mince mixture to make a burger shape and then brush with the egg mixture to seal it together. Fry on a medium to high heat with some frylight until fully browned and cooked! I try and use a spatula to pat them a few times throughout frying to release any excess moisture.
I normally add paprika, bbq sauce and garlic powder to my burger mix and they have a really nice taste. The bbq sauce caramelizes the burgers a bit and makes them extra juicy. You could also try adding bacon or mixed herbs or tomato puree and basil or anything you fancy! You can also use any left over mix to make meatballs, I once used the mixture to wrap around small chunks of cheese and then fried and had with pasta and tomato ragu, that was really lovely! The best thing to do is experiment until you know what you like best and what you don't.
