Here are my old slow cooker standby recipes that we all love:
Beef Adobo
Ingredients:
Fry light 750g Lean Braising Steak 1 Large Onion 2 cloves of garlic 2 Tbsp Plain Flour (7 syns) ¾ Pint Beef Stock 4 Tbsp Soy Sauce 4 Tbsp Rice or Wine Vinegar 1 Tbsp Splenda 2 Bay Leaves Juice of 1 Lime Salt & Pepper
Method: Brown the meat, remove from the pan & add the onion, fry for 5 mins until soft & browned, add the garlic & cook for 2 minutes, stir in the flour, soy sauce, vinegar, splenda, bay leaves & stock.
Bring to the boil then transfer everything into a slow cooker & cook for 8 -10 hours.
Method: Brown the braising steak, remove from pan & add the onions, fry until softened then stir in the flour, mix in the stock then add the tomato puree, vinegar, sugar, bay leaves & ginger, season with salt & pepper, bring to the boil then transfer everything over to the slow cooker.
Cook for 8 -10 hours on low
Serves 4 – 2 Syns per serving
Persian Chicken
Ingredients:
Fry Light 4 Skinned Chicken Drumsticks 4 Skinned Chicken Thighs 2 Tbsp Plain Flour (7 Syns) 1 tsp Turmeric 1 tsp Paprika 1 Chopped large onion 1 tsp chopped Garlic 4 Cloves 1 inch grated root ginger ¾ pint Chicken Stock 4oz Young Spinach leaves – torn Salt & Pepper
Method:
Slash each piece of chicken 2 or 3 times, mix flour, turmeric & paprika together on a plate & coat chicken with this mixture.
Brown coated chicken in frying pan sprayed with fry light, remove from the pan, add the onion & garlic & fry for around 5 minutes. Stir in the remaining spiced flour, add cloves, ginger, stock, salt & pepper & bring to the boil,
Transfer everything to the slow cooker, cook on low for 8 - 9 hours, add spinach leaves for 15 minutes at the end.
Mix all the other ingredients except mushrooms in a separate pan & heat through until simmering, pour everything into a slow cooker,add the pork & mushrooms, cook on low for 8 -10 hours
