You will be in ketosis for as long as you stick to the 'diet' and I think the time limit is to keep it fresh and also because when vitamins and powders (proteins and carbs mixed) are made up with water they need to be consumed otherwise the nutrient value possibly decreases...but it shouldn't hurt to leave it longer (how long are you planning to leave them made up?)
You will know when you are in ketosis, you may get a bad breath and start feeling cold, although it doesnt happen to everyone. I was at the end of day 3 when I went into ketosis.
You need to consume your shakes within 15 minutes or they will lose the nutrients.

Some people go into ketosis after 1 day, so you could be in ketosis. I didnt have bad breath for 1 week, even though I went to ketosis on day 3. Its only now I am feeling cold, into the 3rd week. We are all diferent.
