any ideas for omelettes?

just recently have got RIGHT into omlettes, but so far my variations are pretty much just ham, or ham and cheese, so does anyone have any yummy ideas for fillings on red/green/extra easy days? syn free would be fab, but otherwise low syns is fine. thanks in advance,

I tend to stick to the same combo of ham and tomatoes, sometimes add mushrooms but always put on a sliced mini Babybel and finish off under a grill. The Babybel goes like mozarella then

frittata with potatoe, peppers, onions, cheese. lovely. some good receipes for frittata's on the net takeaway oil and use frylite
