Hi there!
You can do lots with courgette:
*Stir fry it in a pan with other veg and meat serve with some rice/noodles, soy sauce
*Ribbon it with a potato peeler, again stir fry this and serve with some different spices as a side dish, maybe some cumin, paprika?
*You could grate this and make courgette cakes (make sure you squeeze all the water out in paper towel) shape tightly together like a burger and fry in a pan.
*Roasted in the oven with other veg is lovely with some balsamic vinegar at the end
*Layer into lasagne with other veg (peppers, carrots in thin strips instead of pasta!
*Ribbon with a potato peeler and mix with pasta linguine, prawns or chicken and a pesto/cheesey sauce
*Ribbon with a potato peeler and roll up things in the centre, some cream cheese, quark etc for little nibbles
They really are very versatile. I bung them in literally everything!
