Red Day Any ideas to make corgette exciting?

I have roasted it with other veg, like onion mushrooms and cherry tomoatos-all with a good sprinkling of herbs.
Or grate it with pepper and a spot of balsamic vinegar as a dressing makes a nice salad.
Do you like ratatouille ? I make it in the slow cooker and its lovely- not doing SW atm but I'm sure it's sw friendly

I have heard of people cutting them in half length-ways and stuffing them but have never tried that myself.

Hi there!

You can do lots with courgette:

*Stir fry it in a pan with other veg and meat serve with some rice/noodles, soy sauce

*Ribbon it with a potato peeler, again stir fry this and serve with some different spices as a side dish, maybe some cumin, paprika?

*You could grate this and make courgette cakes (make sure you squeeze all the water out in paper towel) shape tightly together like a burger and fry in a pan.

*Roasted in the oven with other veg is lovely with some balsamic vinegar at the end

*Layer into lasagne with other veg (peppers, carrots in thin strips instead of pasta!

*Ribbon with a potato peeler and mix with pasta linguine, prawns or chicken and a pesto/cheesey sauce

*Ribbon with a potato peeler and roll up things in the centre, some cream cheese, quark etc for little nibbles

They really are very versatile. I bung them in literally everything!

I love courgettes. A really simple way to eat them is on toast, believe it or not! Cut them into long thin strips, grill them on a griddle pan with frylight, about a tbsp of lemon juice spooned over them and loads of freshly ground black pepper. Sometimes I have them with cottage cheese on toast.

I really like this recipe as well, only I don't use the olive oil, I just do Frylight instead:

Thank you for all the wonderful ideas. I'm currently roasting my corgette with some red onion, crushed garlic, a few mixes herbs and chilli flakes. It smells divine

I am converted, that was totally delicious will def be roasting my corgette from now on!

Lots of good ideas - I will be trying some of those. But definitely never, never, boil a courgette! It has too much water content already to respond well to boiling.

your post made me go and look for an old recipe cut out of a magazine- heaven knows which one - its taken me 2 days to find it!! It's worth a HEA per person IMO. Goes strangely well with a roast.

Courgette and leek bake

1 tbsp olive oil
2 large leeks, washed, trimmed and finely chopped
2 large courgettes, trimmed and grated
2 cloves garlic, peeled and finely chopped
2 large eggs
125g grated cheese (Cheshire, wensleydale or cheddar)
2 tsp smooth mustard (e.g. Dijon)

Serves 4 (easily halved for 2)

Preheat the oven 180C
In pan heat oil and gently cook leeks, courgette and garlic till softened (10 mins)
In oven dish add remaining ingredients and mix well. Stir in the vegetable mixture.
Press mixture down and cover with a piece of oiled tin foil
Cook in the oven 50 mins
Remove foil and cook for a further 10 mins. Leave to stand for 10 mins before serving
