blooming freezing here this morning 2degrees and had to scrape the ice off the windscreen . apparently weve snow coming so that got me thinking. ...........................
we need some winter warmers girls and im not talking thermal big knickers, im talking warm comfort food but SW style.
its so difficult this weather to stick to plan when theres all those pies and pastries and dumplings etc to keep us warm. BUT! pebs to the rescue, dont despair and down tools, grab that pen and pad and lets do some warm cosy recipes to keep us comfy but on track.
so to start us off heres two from me
winter warmer vegetable soup
( note potatoes in so only good for green or EE plans. or leave potatoes out for a red day. )
a pack of veggies or whatevers in fridge etc.
i bought a pack marked soup/ casserole pack that was on offer for 60p
it had red onions, potatoes, swede, leeks, carrots, all sliced.
put into a pan with enough water to cover, add 2 tbsp veg squuezy stock or 2 veg cubes.
salt and pepper
1 herb stockpot
allow to simmer until veg is soft then blitz. - yummy thick soup and really filling.
The second one is chicken hotpot that I found on another thread .
CHICKEN HOT POT
2 large chicken breasts or 3 small diced
1 onion diced
2 crushed garlic cloves
1 1/2 chick stock cubes
1 veg cube
250ml milk
1/2 tsp each rosemary @ thyme
Salt pepper .
3 medium to large potatoes
1-2 carrots
Big handful of peas
Fry light pan add onion & garlic to soften, add chicken and brown
Add milk and herbs and stocks , salt and pepper. Leave to simmer
Meanwhile add 1-2 carrots diced to a pan and boil, when almost done add peas.
Add veg to chicken mix and stir through.
Pour into a casserole dish
Peel and thinly slice potatoes and place ontop of chicken
Bake gas 7 until potatoes are cooked and brown
