Hi buddies, how are you 2 feeling today?

Went out today looking at new fridges, so excited at the prospect of getting one with an Ice and water dispenser . How sad!

Sticking to plan at this end hoping to lose again this week.

Just put some dried fruit in a bowl soaking in tea overnight to make fruit teabread , I'll let you know how it goes.
Also made carrot and coriander soup for tomorrows lunch with mini scotch eggs .
Morning Pebs.. was in the land of nod when you posted..
Am absolutely SMOTHERING... Felt really pants yesterday so went to the doctor and got an anti biotic.. Throat's not feeling too bad today but I've not stopped sneezing since about 7pm last night.. My poor nose would give Rudolph a good run for his money!!
Otherwise doing fine.. Sticking to plan mostly but needing to find out the PP value of Panadol hot drinks.. Otherwise food yesterday could have had some F&V in to improve it..But porridge for brekkie, baked potato with salad and grilled chicken.. Dinner was a concoction of chicken, veg n soy sauce with sw chips.. Then was straight to bed for me so no even puppy walk never mind exercise...

Nope still no better here pebs, foods looking good though xx

Hi Pebs... How are ya?
Feeling much better today.. But I can't stop sneezing.. Its doing my head in.. Since about 7pm last night I've been sneezing constantly.. Has my eyes red n swollen n my poor nose raw.. But feeling much better otherwise..

Just finished work.
Breakfast - Had muesli with low fat blueberry yogurt stirred in and an apple.

Lunch was carrot and coriander soup, a couple of sweet potato cakes and a couple of SW mini picnic eggs. 4=1 syn flipping gorgeous . I'll post recipe .

Dinner tonight is chicken cake, mash and broccoli and gravy
 
Thanks dubs, glad you are feeling better, I'm not and am going docs tomorrow.
I have not been on plan for obvious reasons but hopefully may have a sts this week.
Pebs I don't know how you find the time to do all that cooking you put me to shame, and I thought I cooked a lot !!x

Whole thing is free + hex a

Ingredients
4 skinless chicken breasts
8 low syn pork sausages/ I used joes sausagemeat
3 babybel lights
6 rashers of bacon

Method
1- spray some fry light in a square/rectangular ovenproof dish
2-slice 2 chicken breasts in small slithers and layer the bottom of the dish.
3- remove the skin from the sausages (just slide knife along and skin comes off easily)
4-break the sausagemeat up into little blobs and layer it over the chicken.
5-slice the babybel up small and lay randomly on top of the sausagemeat.
6-using a potato masher push the cheese into the sausagemeat.
7-slice the remaining 2 chicken breasts in slithers and place over the cheese/sausagemeat.
8-top with the bacon
9-cover with tin foil and cook at 200 for 40 mins or until chicken is cooked through.
10-10 mins b4 cooked remove the tin foil. You will have water from the chicken pour this away and cook uncovered
 
And my beauties here is missys recipe for spinach and potato curry , was yummy yum and just like the Indian restaurants sag aloo.

Recipe serves 6 so I made half and had loads. All ready for other half to take to work tonight.

1 tbsp mustard seeds
1 small onion, diced
4 cloves garlic, minced
2 tbsp grated fresh ginger
1/4 tsp red chilli flakes (I used lazy chilli)
1 tin chopped tomatoes,
1 tbsp curry powder
1 tsp ground cumin
1/2 tsp salt
2 cups vegetable stock
2 pounds potato, cut into 1/2 inch chunks
1 pound chopped frozen spinach
1 tbsp lime juice

Preheat pan and add frylight. Add mustard seeds, put lid on and let them pop for a minute (if they don't pop, turn the heat up!). Add onions and cook for 5 mins. Add more frylight as needed. Add garlic, ginger and pepper flakes and cook for another minutes. Add tomatoes (this should deglaze the pan) and cook for 3 mins, then add curry powder, cumin and salt. Add potatoes and stock (it's ok if they aren't fully covered by the stock). Put the lid on and bring to the boil, once boiling lower heat to a simmer and cook for 15 mins. Add spinach and cook for 5 mins or until spinach is thawed. Mix well and cool for another 10 mins. Add lime juice, more spice to taste and serve.

I cheated tonight. We went to see our house this evening n was STARVING when I got in. So.... I went to my pre-made frozen stash :D well proud :D
And more news...... We got our closing date :eek:
Closing on Monday... SOOOOO fricken excited :D
 
Thanks Pebs.. Dead excited now.. 5 more sleeps ha ha ha.. Just so good to finally have a date to work towards.. Finishing up work on Friday for 2 weeks so go loadsa time to chillax in my house :D Just me n puppy as Jonathan will be working :D

Yes, defo need to get to bed earlier.. God you must be jaded...
