Bacon & Sweetcorn Chowder

Bacon & Sweetcorn Chowder! It's not a SW recipe I adapted it. But the only tweak I needed to do was to miss out the oil and fry the bacon in a little water instead! It was lush! Definately a keeper and so easy to make!

I was keeping an eye peeled for this recipe too but I've had a google and this looks like a similar thing on the BBC good food site. Leave out the oil and use the milk as a hexA and it would be free I think?

3 rashers streaky bacon , chopped
oil
1 small onion , finely chopped
1 large potato , peeled and cut into small cubes
350ml chicken or vegetable stock
400ml milk
200g sweetcorn , frozen or tinned, drained if tinned
2 tbsp snipped chives

Fry the bacon in a little oil in a pan - as soon as it starts to colour, add the onion and potato and cook until the onion starts to soften. Add the stock and milk and bring to a simmer. Cook for 5 minutes or until the potato is tender, then add the sweetcorn and heat through. Season and stir in the chives.
