My friend made Beetroot muffins and courgette muffins a couple of years ago for her birthday. They were lovely and tasted like ordinary cake.
I make beetroot salad- cooked beetroot in very little water, peel when cool, chop into small pieces. You can have 2 dressings
- 1tsp olive oil, dash of lemon juice, salt & pepper
- 3tbsp FF Greek youghurt, 1tsp mayonaise, dash of lemon, salt & pepper
