made this today, was rather nice!
i first of all made a basic savoury mim, with golden flax, and added herbs. i spread this into a silicon loaf mould, and microwaved it for 2 mins.
i fried some bacon bits, but them onto the base, followed by 3 spring onions, finely chopped. then i mixed together 2 eggs, some mozzerela, mayo and dble cream (a bit like cheeseburger pie topping) and poured it over the bacon. i put grated chedder on the top, with a couple of cherry toms sliced for fanciness.
then i baked it in the oven for about half an hour.
turned out rather well!
i am hoping it will make a handy lunch item to take to work.
