cheese is not zero carb. And as michael says it is very high in calories.
Induction is designed to clean us out, so to speak, cut all unecessary extra carbs and get us into proper ketosis. Many people go nuts on cheese, and also go nuts on nuts which is why they are forbidden during induction (lol).
Atkins has been carefully worked out over many years to give us the least painful journey from carbville to ketotown (yes it sounds horribly cheesy ha ha) and we tend to do best when we follow the rules.
I could eat an awful lot of cheese every day if permitted. Just as well it isn't!
