Cheesy garlic chicken breasts - 5.5

1. Preheat oven to 7/220C/425F. Cut a slit lengthways down the side of each breast, opening slightly to make a pocket.

2. Divide roulé into 4. Push into pocket and push closed. Season and wrap with spinach leaves.

3. Arrange in a baking dish sprayed with low-fat cooking spray. Season again and pour stock & vinegar over. Cover and cook for 40 or until cooked, basting a couple of times during cooking.

4. Meanwhile, wilt the spinach in a saucepan with a few gratings of nutmeg. Put in a blender with the fromage frais with seasoning and blend until smooth.

5. Remove chicken from oven, allow to cool for 5 mins, spoon sauce on each plate on stick the chicken on top. Yum yum.
