I just made chicken and veg soup (not a recipe, just made it up as I went along, but it's very tasty).
2 grilled chicken breasts cut into little bits
1 Pack Tesco vegetables for soup (already chopped, etc)
2 chicken oxo cubes
Salt and Pepper
Boiling water to cover
Put it all in a pan, simmer for 25 mins, then blitz for a bit with handheld food processor.
Delicious! I will be making this again.
I'm thinking of having this for breakfast and lunch tomorrow, as it's EE friendly and will mean I can save my A & B for evening snack (cheese and ryvita with hot and spicy pickled chalottes).
