Chilli

Mine is:

Tesco Extra Lean Beef Mince
Garlic & Herb Passata
Tesco Red Kidney Beans in Chilli Sauce
Peppers
Onions
Mushrooms
Courgettes
Red Chillies
Crushed garlic

Black pepper to season

Basically just chop all the veg, put it in a pan with fry light, add the mince and cook until brown. Add Red kidney beans and passata. Delish.

I do Chilli with Quorn. I'm not a veggie but I've just grown to prefer Quorn mince over the years.

Ingredients:
Quorn Mince
Mixed peppers, chopped
2 tins of chopped tomatoes
Beef stock cube
Worcester Sauce
Hot chilli powder
Cayenne Chilli Powder
Smoked Paprika
Garlic
Coriander
Birds Eye Chillies

Instructions
Fry off peppers and onions in Frylight
Add Quorn and chopped tomatoes
Add garlic and stock cube
Shake in lashings of Worcester sauce
Lots of Caynne pepper, chilli powder, and smoked paprika

Leave to reduce

Shortly before it is finished, snip in some coriander

Serve topped with fat free fromage frais (a free alternative to soured cream) and HexA of cheese.

Delicious!

Liz's Slimming World Chilli

[For the chilli]
400 g mince
2 tins tomatoes
1 carton passata
2 red peppers
2 onions
2 carrots
2 sticks celery
2 cloves garlic
1 tbsp cumin
1 tbsp paprika
1 tsp cayenne pepper
1 tbsp worcestershire sauce
2 tbsp tomato purée
1 tin kidney beans

[Rice]
390 g basmati rice
1 tsp turmeric

[To serve]
9 tbsp quark and
3 tbsp low fat fromage frais mixed (tastes like sour cream)

Fry diced onion, carrots, celery and peppers until softened.
Add mince and cook until browned.
Add tomato purée, spices and garlic and fry out.
Add tomatoes, passata, kidney beans and Worcestershire sauce and simmer.
Put in slow cooker on high for at least three hours.
Serve with rice boiled with a little turmeric and 'sour cream'.

I always do this one in batches and this serves 6 generously. We eat two and freeze 4 bit only do a third of the rice and make that fresh each time, if that makes sense?

You can also exchange the mince for various tins of beans to make a veggie version which may be free on green days (don't quote me on that, I don't do them!)
