Coconut flour muffins - yum!!!

Ok, so I'm a bit rubbish at the whole induction phase. I've kinda decided to eat under 20g carbs a day, but not restrict myself to the list of things in the book. I'll see how that turns out! lol!

Anyway, I ordered myself some coconut flour and I think I'm in love!

Made some raspberry muffins tonight when I came home from work and they were delish!

Recipe still needs tweaking, but at 0.7g carbs per mini muffin, i can afford to play around!

Anyone else tried coconut flour? I think I put too much butter, or not enough eggs in my muffins - but god they're tasty! I could eat them all (and I could do at only 10.5g for a batch of 15!).

I'll post pics if I can work out how to do it! lol!

sounds lush!! :)

putting pics up, open a photobucket (its free) account
then upload your pics from camera/camphone to the computer
go into photobucket upload pics from computer to your account quite straight forward
Once you saved your pics underneath each one will have coding tags choose the " });"> one, copy the code and paste it on your thread/message on here :D

In hind sight, I should have made 10 muffins and got bigger ones. Definitly needing less butter because they are a bit squidgy, but damn tasty. Certainly not dry, which is what I was worried about! I've eaten 3.... had to leave the kitchen before I ate the other 12!!!

to resize when you upload to computer right click on the image in your folder click edit should bring up a window in paint

then along the top you will see file, edit, view image, colours etc click image then stretch and skew take use the stretch function and put the same percentage in horizontally and vertically should sort out size.. then upload to photobucket :) hope this helps x Clare

I bought it at Coconut Flour - Fudco

Doesnt say on the packet how many carbs are in it, but I've checked a few places and its about 6g net carbs per 28 grams - which is 1/3 cup apparently. Its what i used to make my muffins, so 6g over 15 cakes was nothing and it tastes so much nicer than flax and almond flour.

Infact, now im confused. I've now read that it has 8g per cup, 6g per 28grams and 1g per 14 grams...

I've not posted it yet because I just cant seem to get it right. Tried 2 batches now and I just cant seem to get them to rise. I'm going to have to invest in some measuring cups because guessing measures just isnt working for me! lol!

I'm away on holiday til Wednesday, so i'll get some when I get back and try again!

I swear, as soon as I get it right, I'll let everyone know! Its my mission! lol! :D
 
how much baking powder are you using? They look lovely, I really want to make some
 
I used 1/2 tsp, but I'm thinking maybe 1tsp next time. The recipe I was modifying was in cups so I was totally guessing my measurements.

I used:

30g coconut flour
2tbsp butter
1/2 tsp baking powder
1/2tsp vanilla essence
pinch salt
3 eggs
1/4 mug davinci coconut syrup
5 raspberries cut into tiny bits

I whisked eggs, added melted butter, salt, vanilla essence and sweetener.

Mixed the flour and baking powder in a mug then added to the mixture. Then added the raspberries and put into paper cases and baked at 190 for 20-25mins.

I had originally started with more butter, but thinking 2tbsp is a much better amount. I'm guessing too much sweetener - might limit that to 2tbsp next time aswell, and maybe up the baking powder to 1tsp.

If the mixture looks too dry I'll add some tablespoons of water.

I'm also thinking I'll invest in some silicone muffin trays because the paper cases didnt really hold well on my last attempt and i ended up with muffin mix on a tray!

Yeah, I think I finally perfected the basic coconut flour muffin mix. Next time I make some, I shall stick the recipe up and take some photo's.

They're sooo tasty I'm scared to make any more incase I eat them all! Will update on final carb content once I've had a chance to actually work it out properly.
 
Ok....So I think I might have worked it out. Made some chocolate/walnut muffins tonight and had previously made some plain muffins a week or so ago. I'm quite confident I have my measurements right this time. Here's some piccy's (which I hope I've managed to resize ok! lol!) and the recipe.

Ok...so I set the oven to about 220

30g coconut flour (6.6g)
3 eggs - room temp (1.2g are we counting them?)
1/2tsp baking powder (0.65g)
1/2tsp vanilla extract (0.4g)
2tbsp davinci's sugar free any flavour
2tbsp butter, melted
1/2tsp salt

Whisk eggs, add butter, vanilla extract, salt and liquid sweetener.
Sieve in flour along with baking powder.
Mix well and spoon into 6 muffin cups.

Bake 15-20mins.

I worked out, not including eggs, the basic mix comes to 1.28g carbs per muffin, or if I'm counting eggs, 1.5g carbs.

I added 1/2tsp cocoa (0.15g) and some walnuts, which I'll guess came to (0.3g) but probably not even close because I only added a few bits to each one. So mine currently have about 1.4g/1.6g each.

Munching one while I'm typing, just to make sure they're ok, obviously!

Oh, and the plain batch I made using coconut davinci's and they were delightfully coconutty! This batch I used chocolate davinci's and the coconut taste is minimal.

The muffins turn out really moist and beat my mim's hands down on the "naughtyness" feeling.

Will have to try them, maybe in November - scared to have too much sweet stuff until I lose the 4lbs I want to in October - will be going on to OWL after that, and these babies will feature heavily. Will have to find coconut flour in the meantime as well.
