Puddings Coffee Sponge Drops

Just made these Coffee Sponge Drops- makes about 26 individuals or 13 sandwiched together. Whole recipe 15 syns!!!

One batch smaller and firmer as left slightly longer in the oven.

They look like Cake burgers lol

A bit messy to make- but fun!!

2oz plain flour (10 syns)
1 Tblsp instant coffee powder ( I used maxwell house)
2 Eggs
10 tsp Silverspoon Light Sugar (5 syns)

Filling is whipped quark, vanilla essence and sweetener to taste

Preheat oven to 190 C/ 375 F/ GM 5

Line 2 trays with non stick baking paper

Sift flour and coffee together in one bowl

In another bowl add the eggs and sugar and whisk until the mixture is light, frothy, and a trail can be left for 15 seconds.

With a metal spoon, carefully fold in the flour mix making sure it is mixed evenly and the air remains in the mixture.

Place into a piping bag and pipe 4 cm rounds onto the sheets.

Bake for 8-12 mins ( mine didn't take long at all)

When cool sandwich together with quark mix, or eat separately!!

Ahhhhhhh can't wait for the weekend, these are on my list of things to make, I would imagine they are ok to freeze!

I've just made these but didn't get a batch of 26 singles, must have made them too big. Have to say they are jummy.

We have just had my profiteroles that I made yesterday , cold- very very Nom Nom and worth 2 syns as they are the size of a Yorkshire pudding!!

I made these the other day......I got 34 rounds....which were made into 17 coffee kisses with quark, sweetener and coffee essence.......nom nom

Instead of the light suger, could I possibly use sweetner instead? and if so wouldnt that reduce the syns?

Yes Vicky, I am sure you can, I just prefer the sugar taste to baked sweetener. Let me know how they work out. :)

If i could get it to you of course, havnt made them yet, just finished tea and need to check i have the right flour. :)
