Creamy garlic mushrooms

Can't beleive I can have this on a diet and oh my god was soooo nice, I'm going to make some more tonight and eat with bacon, yum!

I just fried some shallots and garlic in olive oil, then added small button mushrooms cooked untill nice and soft then added double cream and some chives and cooked on a low heat to let the garlic infuse with the cream.

Not sure if it was the correct way to make it but it was gorgeous I even phoned my mum to tell her how good it was lol

I had cauliflower cheese x made a cheese sauce with Philly and cheese and knob of butter x it was gorgeous )) love Atkins x

Just knob of butter in a small pan, add cream cheese (whole tub) melt gently and add grate cheese x if it is too thick add teaspoon of water until it is consistency that you require x it was gorgeous x

Sounds yummy - we regularly have this with pork loin fried up - makes a yummy evening meal

i add double cream instead of water, and a pinch of mustard powder.
