Delicious and easy tuna bake

Ingredients
Tin tuna
Slice of red (or any other colour) pepper chopped finely
Half a small red onion (sliced finely)
Mayo
Grated cheddar
Jalepenos

Mix the tuna with the pepper and mayo and stir in mayo until desired consistency. Top with jalapeños and sprinkle on cheddar and bake in the oven 200'C until cheese bubbling (approx 20 mins). I grill for a couple of mins at the end for really bubbly cheese!

Easy but delish!

PS will add some chopped celery next time too.

Edited to say - I tried this again with some black olives which were a nice edition. I made a double batch in a deeper dish and it wasn't as moist do I recommend using a shallow dish as per pic above.

I used a shallow dish (lid of a Pyrex bowl) and spread thinly then sprinkled with fine grated cheddar. It looks like a big bowl but it was a perfect amount for one. I am going to have it again tonight! Served it with cucumber slices.
