Didn't know what to have for my lunch
so I made golden veg rice and pickled beetroot complete with juice and it was lovely but it did look disgusting!!!!

I guess the beetroot juice flavours the rice quite a bit! Sounds good, and I think beetroot is very very good for you!

Beetroot is a superspeed food if I remember right. I eat loads of fresh beetroot (the vacuum packed stuff) on salads or with omelettes etc.

I love beetroot with pineapple in a salad.

I think its cos of the strong flavours, I know I have an addiction to things like beetroot and pickled onions, pineapple, and lots of other things
