For those who liked the greek recipes from the magazine

I love kleftiko when I'm in Greece and last year I found a recipe for it in Sainsbury's magazine and it's wonderful. I can't remember the exact recipe but this is how I make it.

Serves 4

750g lamb leg or shank
1 onion, roughly chopped
5 good sized potatoes, peeled and chopped into four
300ml vegetable/chicken/lamb stock with 2tbsp mixed herbs, 1 bay leaf and seasoned with black pepper
2 tomatoes, sliced
50g feta cheese, cubed.

Pre-heat oven to GM4.
Line a roasting tin with foil, leaving a couple of inches overhanging over the sides.
Place meat in centre of the roasting tin, surround with onion and potatoes.
Pour over hot stock and layer the tomatos over meat and vegetables.
Scrunch the foil over the top, leaving space in the parcel.
Cook for 1hr35, remove from oven, sprinkle with cheese and cook for a further 10-15mins.
Serve with salad or vegetables.
