Hi guys,

I've been around for a while and doing slimming world for 8 months now. I've lately realised that while I've cooked loads of different meals while I've been doing SW - I've forgotton about loads of them and tend to stick to about 10 of them on a regular basis. I'm going to pledge to try to do a different meal every night for the rest of August (except for if I make a lasagne which does 2 nights) and write about it on here. Then it's a reminder for me in the future of how many different meals I can cook and might mean that other people might get some ideas too!

I mainly do green days but realisitcally a lot of what I do can also be Extra Easy - I just don't like having to worry about 1/3 extra free so if I have meat I tend to count it as a healthy extra B.

Ham and pea tagliatelle (7th August)

Really quick and easy and delicious

syns: free on green (Use HExA for cheese and HExB for ham)
could be an extra easy meal but would need a salad on the side for 1/3 superfree

Ingredients (serves 2):
tagliatelle
ham (6 pieces)
tin of garden peas
1 egg
half a tub of quark
seasoning
frylight
grated cheese (28g each) to serve

1. Cook the pasta
2. Chop the ham into pieces and heat the ham and peas(drained) in a frying pan with frylight
3. Meanwhile whisk the egg and quark together and add seasoning
4. Drain the pasta and add to the ham and peas
5. Stir the quark mixture into the pan and heat for 30ish seconds
6. Dish up and add grated cheese on top

I'm cooking this in a little while so will add pictures after that!

I've put the piccie up from yesterday's meal. Today it's our anniversary and we're having a Chinese takeaway (all synned of course) but tomorrow I'm making diet coke chicken for tea so I'll put more info up then.
 
Spinach and ricotta pasta (9th August)

I didn't make diet coke chicken in the end - didn't go shopping. We had spinach & ricotta pasta for tea which was delicious.

Syns - free on green if using ricotta as a healthy extra

Ingredients (serves 2)
Spinach (I use frozen, four blobs per person)
1 onion, chopped
170g ricotta
pasta
75ml vegetable stock
1tsp garlic granules (can use fresh garlic but hubby hates it)
1tsp nutmeg
seasoning
frylight

1. Cook the pasta
2. Meanwhile cook the spinach, onion and garlic granules until the spinach wilts (4-5 mins)
3. Add nutmeg, ricotta, and stock and cook for 4 - 5 minutes, stirring lots
4. Remove from the heat, season and stir in the drained pasta

mixed bean casserole (10th August)

Ingredients (serves 2/3)

tin mixed beans in tomato sauce
tin chopped tomatoes
1 onion
2 peppers
handful mushrooms
seasoning
mixed herbs
veggie oxo cube
fry light

1. Chop the onion, peppers and mushrooms. Fry for 5 - 10 minutes.
2. Add the tomatoes, beans, seasoning, herbs and oxo cube to the pan and simmer for 10 - 15 minutes.
3. Serve with whatever you want.

I had it with rice last night but it's also good with jacket ptatoes, potato wedges and pasta.

Well I've been a bit rubbish about putting recipes up for the last few days. Thursday I made fajitas (but forgot to take photos - maybe next time). Friday I finally made diet coke chicken (recipe & piccies to follow). Saturday I was out for lunch. Sunday I had a take-away - oops.

This week is a fish week so I've planned some meals that I haven't made before - I'll try to remember to photograph any of my successes.
 
Diet coke chicken (12th Aug)

Ingredients:

1 chicken breast per person
peppers
mushrooms
onion
passata 90ml
diet coke 330ml
fry-light
pasta

Syns
Green = 0 (if chicken = HExB)
EE = 0 (as long as using 1/3 superfree)

1. Fry chicken, peppers, onion and mushrooms
2. Mix together diet coke and passata
3. Add to chicken and veg, boil and then simmer so that it reduces into a sticky sauce (this week I messed up timings so I added 1 tbs cornflour to thicken it quickly) Normally takes me 10 / 15 mins but I've seen other people who manage to thicken it quicker.
4. Serve with pasta (you can use other things)

** there are many versions of diet coke chicken on this website with different ratios of diet coke to passata (or some that use chopped tomatoes) do a search in the recipe forum **

prawn stir fry (15th August)

Ingredients (serves 2):

Pack stir fry veg (had the Chinese one from Morrisons with edamame beans which was gorgeous)
170g Prawns (I use large as they tend to shrink a bit during cooking)
200g Noodles
Blue dragon stir in sauce sachet (this one was spring onion and oyster)

Syns:
Green 3 for sauce and either HExB or syn prawns (84g each = 3 syns)
Extra Easy (3)

1. Stir fry the veg in fry light for 5 minutes or so
2. Add in the prawns at the last minute (don't like them too cooked)
3. Stir in the sachet and cook for a minute or two
4. Serve with the noodles (4 minutes to cook on my pack)

The only mistake I made was that it looked like loads (lots of superfree) so I ended up leaving some of it as I felt like I'd been eating for ages and had had enough, only to be hungry again after a couple of hours! :confused:

tuna psta bake (16th August)

Ingredients (serves 3 big portions)

2 tins tuna
200g pasta
2 tins baked beans
1 tin sweetcorn
1 pack ready salted crisps
84g cheese

Free on green if cheese is HEx and tuna is HEx B

1. Cook the pasta
2. Stir pasta, beans, sweetcorn and tuna into a big oven proof dish
3. Crush crisps into tiny pieces and cover top of pasta
4. Sprinkle cheese over the top
5. Put into the oven (GM5) for about 20 minutes until topping looks crispy

It's so simple to make that hubby made it cos I was working late :D I had leftovers the next day for tea.
