For a veggie chilli I fry garlic and onions until browned. Add chilli powder, paprika, cayenne, salt, pepper and mixed herbs Add some peppers, mushrooms and any other veg until soft. Add soy mince, kidney beans, baked beans, tinned tomatoes and veggie stock. I also add a splash of balsamic vinegar and simmer for an hour or so.
Very easy and delicious!
