KFC Chicken done the SW way

made this last night, substituting a stock cube in a bit of water for the bovril as I didn't have any in. The chicken wasn't as sticky because of this but it still worked fine and OMG it was DELISH! OH loved it and he is always complaining when I feed him something "diet!" Definitely making it again!!
 
Me too. Me and the boyf are going to the cinema and was gonna have something out, but to help me in my first week of SW we've decided that I'm cooking for him and I want to cook him something he will think is amazing as slimming food, so he loves KFC and I think this is perfect. I'm also making him that giant jaffa cake for desert (but with strawb jelly as he doesn't like orange jelly)
 
This sounds lush! Never heard of this mentioned before so I will share it with my group on thursday! x
 
Here's my version of KFC drumsticks..........


Pete’s KFC Chicken Drumsticks



6 Chicken Drumsticks
1tsp mixed herbs
1tsp Knorr Aromat
4 slices of wholemeal bread
1/2 tsp Paprika
Pepper
3 eggs
Greaseproof paper to cover an oven tray




Place three slices from a 400g wholemeal loaf into the microwave and cook for 2-3 minutes, remove and allow to cool.

When breadcrumbs are cold place into a mini grinder with the herbs, paprika & Aromat and season with Pepper grind to a fine powder, place in a medium size plastic bag.

Prepare an oven tin by covering the inside with greaseproof paper.

Break the eggs into a small dish.

Set oven to 180c

Place the Chicken Drumsticks into a saucepan of water, bring to the boil, turn down to simmer for 5 mins, remove drumsticks and allow to cool.

When cool remove the skin, you should have a moist piece of Chicken.

Firstly dip the drumstick in the egg and then holding the bone of the drumstick, place into the bag, close the open end of the bag and holding it tightly, shake until the drumstick is covered with the breadcrumb mix. Remove and place on the baking tray, adding breadcrumbs where they are missing!
Cook for about 15-18 mins or until the drumsticks look nicely browned…


Serve with salad.

10 x Chicken Drummers or 4 Chicken Breasts
1 x Tub Chicken Bovril Paste
1 x Egg
1 x Clove of Garlic crushed (optional if you dont like garlic)
2 x Teaspoons of Ground Black Pepper (optional)
2 x Teaspoons of Mixed Spice (optional)
1 x Teaspoon of mild chilli powder (optional)
4 x Slices brown bread
2 x Teaspoons mixed herbes

Method
Place chicken drummers/chicken breasts in a deep pan fill with water. Bring to the boil and simmer for 30 mins. Drain and leave to cool. When cool remove the skin and pat dry. Cut chicken breasts into strips.

Place the bread and mixed herbes into a food processor and blend until crumbled and empty onto a large dish. Scoop out all the bovril paste into a small bowl. Mix in the egg, crushed garlic, pepper, spice and chilli until you have a gloopy paste.

Now for the fun bit, but before you start switch on the oven to its highest setting and have a baking tray sprayed with fry light on stand by. Using a spoon carefully dribble the paste all over a chicken drummer/strip then roll it in the breadcrumb mixture and place on the baking tray. Repeat until all the drummers/strips are covered.

Place the chicken in the oven and cook for 10 to 15 minutes or until the breadcrumbs have started to go brown and crisp. Remove and leave to cool. Once cool transfer to a serving plate.

Enjoy!

Just checked the syn calculator and it's giving 8 syns for the whole jar of chicken bovril, but when you use the syn search product it's saying the jar is free???:confused:

Gave it a go for tea tonight, cut back on the chilli, and ate them cold...omg delicious! Thank you so much for sharing the recipe
 
I used to eat KFC at least twice a week before losing weight so this just makes me jump up with excitement lol.
I shall be trying this recipe in the near future lol
 
Going to try make this tomorrow, was going to make it tonight but missing some ingredients and forgot to take the chicken out, am really looking forward to this will be like having a kfc night :D
