Mama's Meals

Oh wow, I am in absolute heaven with all these recipes Mama!

I shall be following this thread intently and stocking up my freezer with some of your recipes in the new year once I've emptied everything else out of there!
 
Is the rice cooker fool proof why to get perfect rice every time? Rice cooking for me is hit or miss(miss mostly) Don't really want to clutter me kitchen, or spend money on stuff if they don't really work

They really do work!! I can't cook rice to save my life...not even in the microwave! :rolleyes:

I bought my first rice cooker a few years ago and used it almost daily. No fuss...just leave it to get on with things. They switch themselves off once the rice is ready...well onto keep warm anyway!...what more could you ask for? Hmm... could always ask Ken Hom/Madhur Jaffrey to move in...:rolleyes:

I was beside myself when mine finally gave up. :cry: I had to replace it as soon as I could...ahh domestic bliss once more. :D

Ahhhhhh the manfluuuuu! :( I has it too :( The b/f always swears by curries when he has it :rolleyes: so we need recipes stat! :cool:

Hi all,
So sorry that I have been so neglectful. Have recovered from the flu but now have sinusitis.

Worse than this, dearest Mia had gone down with chicken pox. This would be inconvenient enough were we not booked onto a flight to Egypt in the morning! Alas, our holiday is now cancelled... Sigh
 
Well, now that I won't be flying out tomorrow, I am gonna make:-

Roast pork fried rice
Nigerian turkey fried rice
Smoked salmon creamy pasta
No fry fried chicken
Jerk chicken, wedges and salad
Salmon, mash and veg

I am also gonna make a large batch of no fry fried chicken for the freezer. I keep eating KFC (so not on the plan) so will make up a batch so that I can get back on track.

I think that's it but, as we're in quarantine, I'm sure I'll find more cooking to occupy me! LOL

Creamy smoked salmon and chive pasta

I got it from the Philadelphia cook book.

Cooked pasta
Philly extra light
Smoked salmon trimmings (sainsburys 98p!!!)
Chopped chives
Black pepper (no salt!)
Stock mixed with water (1 cube, approximate 100ml water)

Heat Philly extra light in pan
Add chives
Add black pepper
Add salmon
Heat through until just bubbling
Add stock bit by bit and taste
Slowly add more water if too salty
Add pasta

Done!

This gets claggy when it cools down so just add a bit of boiled water to rehydrate.

I hope little Mia isn't suffering too much, my 6yr old had the worse case of chicken pox last year that I have ever seen, it wasn't good!

Glad you are feeling better too,and food sounds yum as usual xx

What a fantastic food diary, im sooooo glad i found you.
I love the idea of batch cooking for the whole week.
Do you just keep things in fridge or do you freeze everything?

It's rubbish isn't it! We had insurance so pretty much all of it will be covered by that. As the airline wouldn't allow us to fly anyway, we didn't really have a choice; but that means that we are covered by a medical certificate.

I'm a bit disappointed (more for Mia) but as long as we are all well I don't really care. Our health is the most important thing and it wouldn't have been fair to take Mia to a hot country whilst being so scratchy.

Any tips on making her more comfortable??? X x

I just read about your holiday- how terrible!! Will you be able to go at a later date?

Seen as we have your undivided attention (haha!) maybe you could go through some of these money saving tips with us? I'm all for saving money!!

So, do you freeze all of your food or will it keep in the fridge?

So many questions- sorry!!
