Tonights dinner

Mama's Rich Jamaican Stewed Steak, rice and broccoli. Flippin Yum!

Now remember, I make up all of these recipes so don't really do measurements but have tried for you guys.

For me, this is about trial and error and personal taste. If youre not a confident cook and you want exact measurements I would advise searching for recipes online...x

Seasoning
Schwartz beef seasoning (I like the Montreal steak seasoning)

Steak
2 packs tesco Stewing steak (cheap cuts are fine) I think it's about 1kg

1 Red pepper
5-6 sprigs of Fresh thyme
3-4tbsps Passata or tinned chopped tomatoes
Scotch bonnet
Scallions or onion
Garlic
Worcester sauce
Beef stock
Soy sauce
Vinegar (any)

Season steak and let marinade for as long as you can
Brown steak in pan and put aside

Fry onions and garlic
Add half of the peppers
Add scotch bonnet to taste.
Add passata
Fry for a couple more minutes
add steak
Add beef stock just enough to cover
Add thyme
Dash Worcestershire sauce
Dash soy sauce
Dash vinegar
Taste and adjust (add more of above as needed)
Lid on pot

Simmer for 1.5-2hrs or on high in slow cooker
For crunch, add remaining red pepper about 10-15 mins before the end.

You can also add in some tinned beans (black eye, cannelini, butter beans) and that makes the sauce thicker and yummier. Add these in about half way through cooking.

A scotch Bonnet is a hot chilli pepper. You should find them in the bigger supermarkets or an 'ethnic' food store.

Hi sweetie
The jerk Salmon is the same recipe as the chicken. You don't need to marinade as the vinegar in the seasoning would 'cook' the fish and you don't want that. Just spread it onto the fish and cook.

I cook mine in my airfryer and the results are amazing; consistently the nicest Salmon I've ever had.

Mama Mia just made your no fry kfc - OMG it was amazing.
Weighed the flour (had 10 pieces so used 30g) - so 0.5 syn per piece
loved it!!!

Hi Mama your no fry fried chicken looks so good I can't wait to try it. Can I just ask how much cayenne pepper to use. Never used it before so have no idea how strong it is. I know you don't usually give measurements so was just looking for a rough idea. Thanks

Welcome!
All I do is put a babybel light in the middle of the mince (salt, pepper and maybe some chilli) and mould the mince around it. I then cook them in the airfryer for about 12 mins.

Welcome... And thanks for your kind words.

Say you were making 6 pieces of chicken then I would use about 1-2tsps of cayenne. It's not too spicy but if in doubt then taste some on it's own and get an idea.

Similarly, I usually cook/ fry a test piece and then adjust the seasoning before breading and cooking the rest.

Thought I would add to the SW friendly coconut taste a few of us crave for certain meals.

I used Kara but added 2 drops of cocounut essence to add the extra coconut taste (bought on Ebay and this works for any Jamaican or Thai recipes and is free syns and then the hexa for Kara.
