Mama's Meals

Hey Mama,

I got some jerk chicken seasoning from our local foreign food shop, it's syn free apparently. It says to just marinade the meat then fry with onion and some other bits, then add a tin of pineapple. Does this sound right to you?

Any suggestions on what I could serve with it?

I just want to say a huge thank you for all of these recipes as I was becoming rather 'lost' with what to eat and almost gave up until I read this whole thread and now have meals stored in my favs for the next week to cook.

Well I made the curry chicken, should have stuck to cooking on stove, slow cooker seemed to make it stay tomatoey and yours looked very brown in colour and smoother sauce wise, mine is chunky more like an English stew. I know how curry chicken is, lived with my Jamaican inlaws for a few years. My fave meal.

Proof is in the eating though and cooking my rice and peas now (well kidney beans) will go to town and buy pidgen peas from the market for next time.


Any ideas on if I used too much tomato, about half a can of chopped toms and the fresh toms.
Also a quick question, I cannot get hold of Bols is this bolst curry powder, any other brand suggestions mam please?

I had some West Indian curry powder but bought online a bit expensive for p/p.

well done for giving it a go. yes, i'd lessen the amount of tinned tomatoes and add a touch more curry powder. i am out of it myself and have thrown away the container so cant check. I'll get some this week and post a picture (finally!). it is in a blue tin (plastic lid), with yellow writing. I have tried a few different ones and it is the best. you could try the Rajah ones (mild or hot)... just be conservative in the amount you use or do the taste test by combining all of your seasoning in a bowl and, dab a finger and taste. that way you can get an idea of the salt content and whether it will add enough flavour to your chicken.

welcome and sorry i'm just getting back to you!

i cant lie, i got the recipe from someone else on here but i cant remember who. there are lots of threads that can guide you on the best syn free or low syn sausages to use.

I did your Jamaican stewed beef last night and it was fab, hubby and son loved it too, tonight im doing the jerk chicken (in oven now) so lets see how we go on that one, ha ha.:D

I've just had some jerk chicken (dunn river, I didn't find it hot), your rice & peas recipe and some okra (mixed in to disguise it coz oh is fussy! He ate it all!)

It was nom nom nommy!
