Mix a Mousse

You know you're supposed to eat shakes and soups within 15 mins or so or the nutrients begin breaking down? Does anyone know can you make up a mousse to eat later (ie on a morning to take for lunch) getting ready to go to school in sept and thinking of options.
Anyone know?

I am not sure, I know I made a mousse thing with vegegel and you had to leave it for a couple of hours for it to be any good - hopefully someone will be able to advise! x
