Mock Coconut Pie

I just spied this recipe and thought it could easily be tweaked to make it SW friendly (crustless and use splenda instead of sugar). I haven't tried it yet but thought I'd post it for others to have a go! It got great reviews!

Well, I love coconut and my mind was whirring thinking of the substitutions that I could try to make it as SW friendly as poss. Then I realised that there's actually nothing coconutty!! I've Googled the Spaghetti Squash and it apparently doesn't have any flavour to speak of - so where does the flippin coconut come from?? If anyone makes this it'd be great to hear what it takes like.
