I do the same commute time as you and usually cook when I got home at night. You get pretty good at chopping veg quickly on this diet which helps :). Generally food during the week is Spag Bol, Chilli etc if your doing EE. Jacket Potatoes are good if you're doing a Green or EE Day and are v quick. Also - slow cookers are a god send as you can chuck everything in before you go to work and its ready when you get home. The Uncle Bens microwave rices are between 3-5 syns for a whole pouch and take 2 mins. Plus they are actually really nice,

If you like curry, there is a great curry recipe below (taken from one of the cookbooks)

Chicken Thighs or breasts (about 400 grams for 2 people)
1 Onion
2 tablespoons curry powder
Spinach (I use the frozen stuff - about 6 blocks for 2 of us)
Tin of Chopped Tomatoes
Water to cover
1 large potato chopped into bite size pieces

Brown Chicken & Onion in pan for 5 mins on medium heat (use frylight for this). Add spinach and Potato and stir. Add Curry Powder, Tomatoes and Water and bring to boil. Reduce heat. Put lid on Leave for 20 mins. Done
