Extra Easy newbie :-)

I remember when I first started (this is my second time) and planning was they key. Muller lights and home made soup kept me sane and led me to losing alot in my first few weeks. Well done.

I'm on my 3rd week of EE it's great!!! Planning is the key, I can't always stick to my meal plan but I juggle it around to suit. Lost 6.5lbs in my first two weeks. So it does work :) good luck xxxx

Chicken Korma
2 x chicken breasts cooked in fry light
As much veg as we want
2 x chicken OXO cubes
2 x curry OXO cubes
1 x muller light coconut yogurt

Serve with boiled rice

4-8 medium potatoes
any amount of vegetables
1 Ib of extra lean mince
2 rich beef Knorr stock pot
1 medium onion
to decorate on top: frylite spray oil and paprika

Method
1. Boil the mince in water and chop onion and cook with mince (gives a lovely flavour to the mince), boil fully and once cooked through then drain most of the water but not all. Put the two stock pots in the mince and let melt. Place this on the bottom of the dish and spread evenly covering all areas of dish.
2. Boil the potatoes and vegetables separately and drain fully. Place first the vegetables over the mince and then mash potatoes add salt and place on top of the vegetables.
3. Spray frylite over potatoes and paprika, frylite gives a lovely crispy coating on top of pie
4. Cook in oven for 30 minutes at 200 C. Let cool down and serve as this dish can be very hot

Chicken & Bacon hotpot
Around 2 large or 3 small chicken breasts,
1 Large onion
2/3 gloves of garlic
Veg
2/3 large potatoes (depending on the size of pie dish you are using)
Around Half a punnet of closed cup muchrooms, cut into chunks
Around 250ml skimmed milk
1 1/2 chicken stock cubes and 1 veg stock cube
Salt And Pepper and a little rosemary and thyme to taste

Method
1. Dice onions, crush and chop garlic and pop in the frying pan with a little fry light heating gently to brown.
2. Dice Chicken and add to the frying pan.
3. Make up chicken stock and pour in the 250ml of milk.
4. Pop the chicken, garlic and onions into a pan and add stock/milk mix. Cover the pan and put on a low heat.
5. Add any other veg to the chicken mix and simmer for 10 mins
6.Slice potatoes into thin strips and put to one side.
7. Pour mix into dish and put potatoe on top then spray with frylight, salt & paprika.

Then cook on 150 for around 20 minutes or until potatoes are browned.
